Easy Chicken Tortellini Soup


I got so many requests after I posted on Instagram that I was making homemade soup, when I actually do not particularly like soup.


However, this recipe is a childhood favorite and the easiest soup to make! It will quickly warm your soul on a cold day.


Ingredients:

  • 2 Rotisserie Chicken Breasts

  • 1 White Onion

  • 4-6 Carrots

  • 1 Stalk of Celery

  • 3 Red Skin Potatoes

  • 1 Bag of Bertolli Cheese Tortellini (Family Size)

  • 2 Large Cans of Reduced Sodium Chicken Broth


Directions:

  • Boil carrots, potatoes and celery in a pot until tender (about 20-30 minutes)

  • While those are cooking dice white onion and set aside

  • Once tender, drain water. Then, add carrots, potatoes and celery back into the pot

  • Add chicken broth to the pot along with diced celery

  • Let simmer for 45 minutes or longer

  • About 10 minutes before serving, add in cheese tortellini and cook until tender.

  • Serve with warm loaf of bread and butter
